Cooking on Sunday: Pantry Medley Mix

I wasn’t feel well last week so didn’t end up doing a lot of grocery shopping. I also noticed that the freezer was starting to fill out so decided to do another pantry/freezer clean out (read about my first one here) to make way for other foods. The medley of meals this week include:

  • steak with mushrooms, onions, green beans and mushroom burger mix (saute the mushrooms and onions after the steak, it smells and tastes amazing!)
    • basting and cooking the steak in butter is heavenly

  • mushroom burger mix with tuna cakes (I still have so many cans of tuna left!),
    • Mix 2 cans of tuna with 2 eggs, chopped green onion, salt and pepper, bread crumbs, crushed red chili pepper flakes. Mold into 1/4 cup sizes and bake in oven for 22 mins.

  • homemade tomato sauce with lasagna sheets and turkey meatballs
    • Sauce: chop up veggies and tomatoes and place in a pot and simmer until it thickens (you can add tomato paste too)
    • Pasta: break up sheets of dried lasagna and boil until al dente (about 8-10 mins)
  • stir fry veggies and vermicelli
    • Chop up desired veggies and saute them in a frying pan
    • Prepare vermicelli according to package instructions. Add to veggies
    • Whisk together: 3 tbsp soy sauce, 2 tbsp hoisin sauce, 1 tbsp rice wine vinegar and pour over veggies and vermicelli, stir until mixed

Not much of a recipe week, more of a put things together that taste good and keep it simple. Happy cooking 🙂

Cooking on Sundays: Eggplant Rollatini, Salad and Meatballs

After spending most of the weekend outside at festivals (T&T Waterfront Night Market and Rib Fest at Fort York Garrison), meals for this week were pretty simple and full of vegetables. Eggplant rollatini (lasagna rolls with eggplant instead of pasta sheets), cauliflower salad, and kale salad with avocado dressing. I haven’t been eating as much red meat lately to the point where my iron count was too low to donate blood this weekend – so I got some turkey and made meatballs. Cooking on Sundays: Meatballs Part II

Trying to keep up with cooking has been tough since last weekend was St. Valentine’s Day and a long weekend that included a winter wedding.  For this weekend, it was my birthday on Friday so we went out to celebrate Saturday night at Wvrst (Sausage Hall And Other Wonders). It was a lot of fun to start a new decade with friends 🙂

Happy birthday to me!

Waking up Sunday morning was a little tough so we decided to keep cooking to a minimum. Since there will some of those  delicious  meatballs in the freezer, we decided to make sandwiches! We paired it with a kale, bacon, and brussel sprouts caesar salad. The only salad that the BF eats because it has bacon in it!

It was a simple yet yummy dinner. The BF browned the meatballs and then put them in the oven to cook fully. We got buns and made them into cheesy garlic bread, then smothered it with pasta sauce and then layered with meatballs on top. For the salad, I chopped up kale, brussel sprouts, and bacon. Cooked the bacon to a nice crispy consistency and then drained a bit of the grease out and then threw the veggies in. Rather than making caesar salad dressing, I bought it store-made and tossed it in with everything else. We forgot the Parmesan cheese but it still turned out really well. Cooking on Sundays: Meatballs Edition

There wasn’t an edition of cooking on Sunday last week because I had to do a sleep test and needed to be in the clinic early in the evening, but we are back this week with meatballs! They are a very versatile food – you can mix them with pasta and sauce, make it into a sandwich or just eat them on their own.

Today, we made  meatballs served with cheese tortellini (store bought since I don’t know how to make pasta) and tomato sauce (also store bought because we already had some at home).

The recipe from Host the Toast is titled: “The Best Italian Meatballs You Will Ever Eat“. With a title like that, we had to try them out. Firstly, we didn’t find any veal at the grocery store so we turned into a pork and beef meatball. We ended up modifying the recipe a little bit by using more Parmesan cheese and leaving out the milk. It turned out to still be super delicious and moist!  The BF made them the size of golf balls and there were enough for dinner, four lunches and 11 balls went into the freezer for a later date.
